If at first you don’t succeed…..

During my time as a vegan, I learned a recipe to make great plant-based pancakes, which I still eat today. They taste really good and not too dissimilar to the normal egg and milk version. The cooking process is exactly the same though. You heat the oil, put a ladle full of batter into the pan, the pancake sizzles and crisps, and you flip it until golden on both sides. But unless you’re a pretty good chef or just seriously well practised at making them, you’ll likely botch the first pancake, producing something misshapened and uber crisp-slash-burnt on one side.

But you don’t throw out the whole batch because the first attempt was a bit askew. I mean, it’s still edible, right?

I’m back with the Vegan. The first attempt wasn’t great. Not altogether bad and not a complete throwaway but definitely something that can be improved upon on a second attempt.

We’re trying again and so far, so…..okay? I’m not quite convinced enough to call it good at this point. That’s not to say that it’s bad but certainly, we’re both very weary of the failings we’ve previously experienced. It’s only natural to be a little cautious when starting over, after all, you already know how it can all come undone.

To try and overcome this, there’s been more talking, we’ve reached an understanding of what it is we want for ourselves and what we want from each other going forward. On many levels our goals are unmatched for the immediate future but long term, we share the determination to lead happy and balanced lives, and I’m looking forward to us working towards that together.

Above all, he loves my vegan pancakes, he can’t get enough of them. He doesn’t like to admit it but he can’t get enough of me either.
